Crunchy sweet cabbage salad
This is my mother’s recipe. It’s something of a change from standard lettuce salads, it has a lot of body to it.
500g cabbage – you can have it white, red or a mix of the two – sliced thinly
1/2 large onion cut into thin half slices
1 small lemon, peeled and chopped
Two handfuls of raisins & 1 chopped apple
Half a teaspoon of honey
Two handfuls of walnuts, chopped or broken
Salt and pepper to taste
Directions: simple. Just mix, and leave for about ten minutes before eating to let it all blend.
Will jeep in the fridge, covered, for about 2-3 days.
