Raw, healthy, sugar-free cake!!
I don’t have enough room for all the great search terms I could put into the title. This cake is raw, delicious, super-easy, impossible to get wrong, sweet but fine for diabetics, totally healthy — how is it done?

What do you need?
200g of dates (If you buy them pitted, that comes to 185g)
60g almonds (raw for health or toasted for taste – your choice)
1 and a half heaped teaspoons of cinnamon.
So, you need to get the stones out of the dates. This will take a little while. Just get a knife, slit them and take the stones out – and in so doing, tear the dates in half, so that for every date you stone, you have two pieces of date flesh in your bowl. Make this a round, decent-sized bowl that will take all the dates, but not too big – you’ll see why soon.
Chop up the almonds and the walnuts. I like to slice the almonds lengthwise into two halves, and crush the walnuts. Do it as you like, it’s your cake. Add them to the bowl with the cinnamon.
Now, clean your hands and put them in the bowl 🙂 Press the dates down with your fists, knead them, mix them, and knead them again. To start with you’ll just have a load of sticky dates and nuts, but eventually it’ll soften up and make a dough which you can easily collect up into an even ball. Do that. You can keep kneading for a while after if you want to make it softer, but it’s not necessary – try different ways of doing it, I guarantee you’ll come back to this recipe.
Place the ball on the plate which you’re going to be serving the cake on and with your hands flatten it into a cake.
