Raw vegan chocolate date cake

A while back I made another version of my raw cake, this time with chocolate. Unless you can find raw cacao, this won’t be a 100% raw recipe, but it is close enough. Probably the healthiest chocolate cake you’ll ever have. 🙂

Ingredients: 200g dates

100g chopped hazelnuts, raw or toasted according to your preference

2 modest tablespoons cocoa

You can add honey or the sweetener of your choice (be healthy!) if you find the resulting mixture too bitter. I like it as it is, dates are quite sweet.

You want to get the stones out of the dates. Just get a knife, slit them and take the stones out – and in so doing, tear the dates in half, so that for every date you stone, you have two pieces of date flesh in your bowl. Make this a round, decent-sized bowl that will take all the dates, but not too big – you’ll see why soon.

Add the hazelnuts and cocoa.

Now, clean your hands and put them in the bowl. Press the dates down with your fists, knead them, mix them, and knead them again. To start with you’ll just have a load of sticky dates and nuts, but eventually it’ll soften up and make a dough which you can easily collect up into an even ball. Do that. You can keep kneading for a while after if you want to make it softer, but it’s not necessary – try different ways of doing it, I guarantee you’ll come back to this recipe.

Place the ball on the plate which you’re going to be serving the cake on and with your hands flatten it into a cake.
